The Dovecotes Cave gently descends into the bowels of the Osteria, to the heart of Sangiovesa. Dug into sandstone, the Dovecots Cave is characterized by numerous tunnels that run underneath the town. One source, entitled the legend of Penelope, written by Tonino Guerra, awaits you at the end of the descent. Along the walls of the gallery are many niches of different shape and depth, formerly used to store barrels of wine. Today they welcome guests, and hence the name of the cave, a project by Tonino Guerra and Gianni Volpe ‘Messaggi Alati’ (Winged Messages).
